Pasta and Potato Soup

I'm not a natural cook, I like things that can be chucked in the oven for 30mins and ta da - we have a meal! But, this week I thought I should really think about our diets, although it is difficult as I live with the fussiest man in England - but here is a recipe he did fancy, so I cooked it - Pasta and Potato Soup.

The ingrediants - 5 tablespoons extra virgin olive oil, 110g diced bacon, 1 diced carrot, 1 diced onion, 2 diced celery sticks, 1 fresh chilli, 2 peeled, seeded and diced tomoatoes, 500g peeled and diced potatoes, 500ml of water, 250g pasta.

first you fry the bacon

then add the carrot, onion (I used leek instead of onion) and celery and fry till onion starts to brown

add the chilli and tomato and cook over a low heat for 10 mins

add the potato and cook for a further 5 mins

add two thirds of the water, cover and simmer till the potatoes are cooked

add the remaining water, bring to the boil and add the pasta, stir and cook

add more water if necessary, season to taste

it looked nothing like the pic in 100 Great Pasta Dishes by Ann and Franco Taruschio but it was very tasty! Rup had 3rds!

Now off to take the dog out to distract her from pulling all the washing off the dryer!

  1. Looks good to me Sharon, and I am like you in the cooking dept, even I might be able to manage that. You need to put a slow cooker on your crimbo list, wonderful things, just lightly fry everything like you did there, then bung it all in the cooker (can do it the night before) and serve up at tea time, easy peasy.
